But space is tight. Could I just cut the straight stereo plug off and solder a right-angle stereo jack on instead?

Of course you can, just as long you solder it back up the correct way.
It's something I've been meaning to do, change the straight to right angled on my moog exppedal.

I really don't understand why places stick straight plugs on expression pedals. If if they aren't going on pedalboards I'm pretty sure keyboard players would appreciate the reduced risk of knocking sticky-outy cables. It's probably going to be going into the Moog anyway so it makes little difference because the exp input is on the back and I doubt any other pedals would fit above it anyway, but even so. Angled plugs win. Always.
