It is done. It would likely be even better with a new nut, but it is great. I have the action a little higher than I am used to with my guitars. More like the action on a bass to avoid rattle. MUCH easier and better sounding with chords. I really like this. I started with bass, but moved to guitars. This is basically perfect. The weight and neck, but thinner strings. I did a demo video. It sounds a TON better in real life, but it gives a basic idea.
Having two (Schecter) VIs, I restrung one of mine to baritone too, and also love it; also use B-b tuning. The shittier pickups in my Ultra VI really work better with baritone than bass tunings, so now I play with it a lot more. Hope yours sees increased use as a baritone too!

But dang, that action is super high. To each his own, I find myself more liking my strings to kiss the frets and buzz with aggressive picking.
I hope I will use it more now as well. I think if I changed the nut to one that wasn't cut for thick bass strings it would help the action a bunch. It isn't a big deal to me though. The strings are thicker so it doesn't hurt my fingers or anything playing with it like that. Nowhere near the action Mascis has on his Jazzy's or anything.
Those strings you mentioned using are about the thickness of the lowest baritone strings. They are very nice. FYI the website I was directed to that makes baritone strings for Fender Bass VI's is:
sweet! gonna have to order them once i get it and make the conversion. always felt they'd be way better as a baritone. feel like it's gonna be the best of both worlds from guitar and bass since i'm in a 2 piece band and dont wanna go with the whole bass/drums dynamic, but need just a lil more lowness to the guitar sound.
