I used to have a GK-3 -> Roland GI-20 -> Microkorg (the later a Roland XV2020) setup. Which, whilst fun, was pretty cumbersome to cart around. So I did want the new thing to be good. I think if I were to do something like this now it'd have to be the Fishman Triple Play with a soft synth. Separate pickups are a pain (and it ties you to one guitar), but it still seems the only solution.
