Long story short:

Can I just change the cap on a guitar's tone control for more treble when it's rolled all the way up? Or do I need to change the pot and it's value too?

Both will give you the most effect when tone is rolled all the way up.

Raise that pot to 500K/1MEG and drop the cap.

It's just that I have to roll the treble and presence up a bit on the Marshall when using the Jazzy, it's mainly down to the SD Vintage though- the stock neck pickup still has a shade more upper treble than the Vintage in the bridge. Reaaaally don't wanna replace the pickup though.

Quite. I don't think people's ears could hear frequencies beyond 9K in the olden days.

I guess to get rid of that issue you'd need the pups to be a matched set, as Mike said the most effect is already made possible (short of a treble booster, anyway) by the present configuration. Surprisingly, AVRI jazzy pickups dont go for as much as I'd expect on Ebay. ~40 to 60 dollars.

yea, and thats about it. Noble and creative idea, but hardly worth it. Some company charges like 60 bucks for a setup like that. cuh-ray-zee.

I'm not too worried about mismatch really- I use the bridge pretty almost exclusively live with WK, and generally it's distorted when I switch to the neck position, so not much of a problem.

I guess it doesn't really matter, don't need aaaall my guitars to sound exactly the same or anything.. it just loves mah bright clean tones! The SD Vintage definately has a slight upper mid honk with my setup, compared to the Strat and Doogcaster.

The Telecaster is always gonna have more spank than the Jazzmaster, I think that's because of bridge position and tension as much as anything.
