The different loudspeaker outputs connect to different impedance loudspeakers. You should always generally match the impedance of the speaker cab with the head, that's what the outputs are for.
5W -> 15W is all about clean headroom. The 5W amp will break up much earlier, probably around shouting/loud talking volume. 15W will break up with a drummer.

yea, the higher wattage gives you more volume. it's kind of wierd, everytime you multiply the wattage by ten the volume is twice as loud. so 50w is twice as loud as 5w. two 5w amps is not twice as loud as one 5w amp, it is only as loud as a 10w amp (something like 11% louder than 5w). get it? 100w is also is only around 11% louder than 50w.
