I wonder if there are any lefty Fenders with a non C profile.

The Baja is a soft V. It kind of feels like a U. Similar to the '72 Deluxe neck.

My AV '57 strat has a V neck and so does my friend's 60's martin, it's really comfy for stuff where you fret the bass notes with your thumb.
