Re: What are your favourite/dream acoustics
I've had my Yamaha FS730s (solid spruce top rosewood back and sides, rosewood board, Nato neck) for a few years now and haven't wanted another acoustic since I bought it. Not fancy but it sounds good and is getting better with age.

Martin O-15, Gibson J-45
I think my OO-15 is the nicest acoustic I’ll ever own. Real Martins are so expensive now (the affordable ones are all imports with made-up model names) that I probably wouldn’t buy one even if I could and I view acoustics as just really fragile and of questionable necessity to me at this point. If I had a $4000 guitar I probably wouldn’t want to take it out in travel/performance situations that would warp it to pieces or get it nicked.
Plus my OO is close enough to one of my dream models that I don’t really find myself regretting not having the swankier white whale option. My friend has a vintage OO handed down from his dad and while it’s pretty nice it’s had repairs alone in the past couple decades that were pricier than my whole guitar. It was like $700 in 2001 but the closest thing to it Martin still sell is $1300.
