Digital is going to be the most versatile and they're getting cheaper all the time. You'd be able to put tracks on yr computer and do some simple mastering and touch-up work as well. The sound quality is also much better, more then good enough for a demo.
Adobe Audition is a great piece of editing software, and there are hacked versions all over bittorrent.
This would work really well, though you'd probably want to buy a bigger flash card:

For $100 more, you get an internal hard drive and 4 simultaneous record tracks:

Regardless, look for one with built-in amp modeling; it makes capturing ideas much easier.

I don't know where you live, but if you are here in the states, you can find a cassette 4-track on craigslist for $50 all day long in most cities.
If you are new to recording, I say keep it simple. I love the way 4 track cassette recordings sound for some stuff. If you want to record loud rock or metal, go digial though. If you are a singer / songwriter go cassette. Every heard Nebraska by Springsteen? 4 tracks and hotel rooms.
