alt. Mustang wiring again ???

I've been searchin a lot on the net but still can't find what I'm looking for...
I'm gonna rewire the Stang this weekend according the GM Arts schematic
but still have a question concerning switch 2 (switch 1 is ok):
(bridge PU is gonna be a JB jr.)
1. Is there any sound difference between "volume only" and "volume & tone (normal)" ?
(without turning the toneknob ofcourse )
2. Is there another option instead of the "bypass (no controls)"
(I like to keep any volume control on it so maybe ther's another option instead of the bypass)
