I changed the bridge single coil on my "mustang" for a humbucker, should i change the pots to 500k? Does this matter if normally the pots are on max?

Depends on the winding and output. A 9k humbucker will probably be okay with 250k but I would change to 500k to be on the safe side. Your neck pickup might sound a little shrill so you will want to back off the tone when changing to it.

I use 500k regardless of what guitar I'm on.

Humbuckers go best with 500k, single coils go best with 250k. I really should have changed pots when I put a Hot Rails in my Strat. I love how it sounds, especially with distortion, but it is pretty muddy. Part of me wants to experiment with a 1 meg pot...
But yeah, I'd spend the extra 5 dollars and change pots if I were you.

I thought I'd give my mustang a shot with a humbucker and the stock 250k pots. Didn't last long. Definitely worth the change.
