I oiled a neck on a strat and that was super easy, just wire wool it between coats and at the end so to get a satin finish. It was one of the best feeling necks I've ever had on a guitar.

I finished an Allparts neck with Tru-Oil and it was easy; you just need some old denim, some wire wool, the tru-oil and a little bit of patience. Can link you to the thread, if need be.

^^ Aye I've heard good things about tru oil in both terms of ease of application and finish. It's on my to-do list one day.
I also had a lovely result using just Shellac. Just be aware that if the grain is quite thick (like mahogonay or something) you may need to grain fill first. Shouldn't be required on a maple neck though.
